Champagne Brut “Oeil de Perdrix” Jean Vesselle
Champagne with an ancient flavor, this Oeil de Perdrix by Jean Vesselle, produced by Bouzy’s parcels, a veritable “kingdom” of Pinot Noir in Champagne. The particular color that distinguishes it is the result of a short maceration that takes place entirely on the skins. It is 1972 and Jean Vesselle, father of Delphine, the current owner, during the renovation of the domaine finds hidden inside a wall some bottles of Pinot Noir in perfect condition. Intrigued, he immediately decides to uncork one. What is presented to him in the glass has an incredible color. The aromas are rich, evolved and not comparable to those of other Champagne in circulation, perhaps unique. Jean, with the approval of his collaborators, decides to document this and takes over the production of the Oeil de Perdrix in full respect of tradition.
