The Champagne Reserve Ambonnay was born in the  grand cru of the Montagne de Reims that shares its name. It is expressed in a fascinating complexity in which notes of citrus and candied fruit can be recognized. The taste is fresh, clear and very mineral, with long fruity notes in the closing. It is created through a pressing of the grapes, 12 hours of decanting, spontaneous fermentation in steel containers, malolactic fermentation, and refermentation in the bottle using the Champenoise Method.
