Domaine Alice Beaufort “Le petit Beaufort” Millesimato 2011
This is a sparkling wine born in the wake of the Champagne of Andre Beaufort but with the desire to offer a high quality sparkling wine more accessible and enjoyable. The care of the vineyards and the winemaking is traditional, it takes away the new methods of modern technology and refers to the winemaking systems that date back to the early 1900s. The wine makes its entire journey in wood. The wood is aged a minimum of 3 years, allowing the wine to obtain a micro-oxygenation connected to a controlled oxidation and not the taste and aromas of the wood. When the fermentation is over, the decanting takes place, the barrels are washed and the wine is put back into the same barrels for a well-deserved rest before the tirage.
