Description
The Jonny Gambato features six different types of grapes that are harvested together and blended using white winemaking techniques. The fermentation occurs from the vats to the bottle and relies on its natural yeast to help sculpt its taste from tanks to bottle. The wines are bottled in March and finish their fermentation with the last 10-12 grams of its natural sugars.
