Pecorino “Onirocep” Pantaleone DOC 2018


The Pecorino “Onirocep” of Pantaleone still bears the name of the vine written as an anagram, a stylistic choice due to the fact that a few years ago the area was not yet recognized as DOC and the vine could not be named. In more recent times, however, the real name has arisen. A dragging and characteristic wine. The wine benefits greatly from Pecorino grapes grown at 450 meters above sea level, which even in hot years can maintain a good shape. The vineyards are conducted in organic. The fermentation takes place in steel and a cryomaceration is scheduled. The aging is always done in steel for a few months and the cellar does not use wood to leave the natural freshness of the wine intact.
