The Red Pithos of Cos is born from the love for the territory, from a rigorous application and convinced of the principles of organic agriculture. It arises from the desire to return to the earth, to restore nature to a valued heritage and handed down to new generations. The idea of returning to terracotta as a container for the fermentation and refinement of wine. The Pithos Rosso comes from Nero d’Avola and Frappato di Vittoria harvested between the end of September and the beginning of October, left to ferment with natural yeasts and refine for 10 months in terracotta amphorae. An evolution that gives intriguing notes of cherries and violets, of anchovies and brine, with a very fine and thin herbaceous closure; in the mouth it is fresh and sapid, it has an infinite persistence.
