Vernaccia di San Gimignano Campochiarenti DOCG 2018


The vineyards where the grapes come from, are located on a soil of Pliocene origin consisting of yellow sands. The grapes are subjected to a soft pressing: the draining must, after a cold decantation lasting for 18-24 hours, is clarified and then placed in steel containers for fermentation at a controlled temperature. After racking, the wine is kept on the fine lees until stabilization. It matures in the cellar until bottling and rests in the bottle for a minimum of three months to allow the bouquet to be refined. The characteristics of the vine make it possible to produce a pleasant drink when young, which increases in complexity and harmony with aging.
