The “Antico Colle” Typical Geographical Indication red wine comes from a combination of Sangiovese, Merlot and Cabernet Sauvignon grapes. The grapes are harvested at the end of September, as a rule. The alcoholic fermentation takes place in stainless steel vats at a controlled temperature (not higher than 30° C) with fillings that integrate the pumping over. Fermentation and maceration last for 14 to 16 days. The maceration on the skins follows the final racking carried out with a soft pressing of the skins.
